I am doing the iodine clock investigation with peroxydisulphate(VI) ions. How do I turn my answer for the activation enthalpy into the curve on the graph with enthalpy on the y axis and progress on the x axis if you know what I mean?

The two key values are the overall enthalpy change for the reaction and the activation energy. These give you the key points relative to the vertical y-axis.
 
The horizontal axis is essentially arbitrary. You have no way of putting a scale on the x-axis and plotting points relative to that scale. It is the y-axis that matters.
