I am currently Advanced Higher Chemistry in Scotland and am about to start my investigation i would like to do a quantitative determination of vitamin C in different brand tablets or an experiment involving esters. Could you please suggest some investigations involving these topics.
Ulex writes: What a very interesting idea. You will find that the Nuffield Advanced Chemistry Special Study ‘Food Science’ has a very useful experiment which you could adapt. In the Study, the experiment is used to estimate the Vitamin C content of cabbage but I am sure the method could be adapted to work with tablets. The details are on p.11 of the student’s booklet, Experiment 2.7b. Vitamin C is also used as a flour improver; would there be any future in trying to find out if there is a measureable amount in ordinary domestic flour and also in flour for breadmaking ?
Esters might be a bit harder to investigate, especially if you want quantitative measurements.
