For my chemistry coursework I am doing metal/acid and activation energy. If I use a gas syringe for both experiments will I lose marks for not showing more practical skills?

There is nothing in the specification to suggest that you should lose marks for using one method for collecting the gas.
 
In your report it might be a good idea to describe the possible methods and explain why you have chosen to use just the one method. By showing that you are aware of a range of procedures and by explaining your choice you deal with the criticism that you have only used one technique.
